RECIPE OF THE WEEK - EASY

HELLO WORLD!!! It's been a beautiful day here in Colorado, USA where I live. And melon season is approaching, so here is an easy dessert to try:

CANTALOUPE CROWNS

Cut a ripe cantaloupe into rings. Remove seeds. Scoop balls from the melon leaving about a half inch around the edges. Place rings on individual serving plates and pile small scoops of lemon or lime sherbet (or sorbet) and the melon balls into the centers. Garnish with mint leaves and a strawberry, if you like. Or, you might try honeydew melon rings with orange sherbet balls.

These would also be good for a weekend brunch with some deviled eggs and cheese sticks.
